----“The ranting’s of a long suffering wife of a guy who is nuts about food“
A young man who started cooking out of necessity fell in love with the whole process of experimenting with ingredients and discovering something new or sometimes rediscovering the already proven. He would try any Indian food for the novelty, dissect and bisect its flavors to try and understand what made some flavors click while some, not so enjoyable.
To Ajay, our Founder and Manager and our “driving force”, it was always about the de-gustatory experience. And, out of this need to make “Food”, an enjoyable experience for everyone who eats, was born “Chilli Farms Restaurant”, named after his favourite “fruit”, the Chilli. On his travels to realise his dream, Ajay met many people, ate a lot of food, spent many hours debating the nuances of different combinations of cooking styles with his long suffering wife and after much deliberation handpicked the current team in the kitchen.
The “Masala” mix which was resulted from the above mentioned efforts is as follows:
CONRAD: His culinary range is wide and varied and an Executive Chef who is simply *“Jhakaas”!
*“Jhakaas” Marathi word which translates as Superb
SURESH: With over 30 year’s experience and a moustache that rivals *Veerappan’s, he is the “South” of our “North and South Indian” cuisine.
*Veerappan ~ an infamous sandalwood smuggler from South India
SHOHAG: Fluffy breads and sizzling tandoor cooked dishes that simply make your mouth water. Working in our Kitchens as a Chef is something he does as a pass time while he hopes his real talent, *SINGING
*I can’t vouch whether you will like his singing, but I will vouch for his yummy tandoori dishes and amazing Kashmiri Naan bread.
RUPESH: He is “The" hand that does everything…..preps, cooks, cleans, decorates, calls out the orders and provides comic relief to the rest of the “comediennes” in the team!
SUBHASH: Multiskilled, multipurpose “dude” who has been with us from the first day we opened our doors and has served in all roles except as a “Chef”!
