Cooked and refined through 600+ iterations over the past few years, this dairy-free biryani delivers the same satisfaction as a perfectly made traditional biryani. It is designed to be good, reliable, and easy to make — a biryani that brings families together around the table.

We offer two distinct styles of spice mixes. Both deliver authentic Indian flavour, but they are designed for different cooking approaches.
1. Restaurant Style Spice Mix
How it works:
The curry sauce is prepared separately using the spice mix. Your chosen protein or vegetables are cooked on their own, then combined and simmered together at the final stage.

This technique gives greater control over flavour balance, texture and consistency. It produces a smoother, more refined finish — similar to what you experience in professional kitchens.

2. Home Style Spice Mix
How it works:
The spices are added directly during the cooking process with onions, ginger-garlic and other base ingredients. Protein or vegetables cook together in one pot.

Why this method is used:
It is practical, comforting and efficient. The flavours develop gradually as everything cooks together.

Both styles use the same philosophy of authentic flavour. The difference lies in the cooking technique and the final texture you wish to achieve.
At Chilli Farms, every spice mix is prepared in-house in carefully controlled small batches. We do not outsource this process. It is part of our craft.
1. Sourcing
We source our spices directly from a single trusted supplier in India.
Working with one consistent origin allows us to maintain uniform intensity, aroma and flavour profile across batches. When you cook with our blends, you can expect the same depth and balance every time.
2. Small Batch Production
Each blend is produced in a dedicated spice preparation area within our facility.
We work in small quantities to ensure freshness and strict quality control rather than mass production.
3. Grinding & Blending
Whole spices are carefully measured and blended using a Thermomix to achieve a fine, even consistency. After grinding, the blend is passed through a fine strainer.
This process is repeated multiple times. Any hard fragments or coarse particles are removed until only a smooth, refined powder remains.
4. Hand-Finished Quality
Every batch is hand processed and checked before packing.
The result is a premium spice mix with:

5. Dietary Assurance
Each blend is produced in a dedicated spice preparation area within our facility, using dedicated equipment and machinery.
All our spice mixes are:

This controlled process makes them suitable for a wide range of dietary requirements while still delivering authentic depth of flavour.

At Chilli Farms, we offer our dishes in five spice levels to cater to different preferences: Mild, Medium, Hot, Extra Hot and Reaper Hot.
Our spice levels are determined using an internal formula based on the amount of chilli powder added per litre. However, other ingredients in our recipes, such as spices, aromatics, and cooking techniques, may influence how you experience the spice.
Please note that our spice level definitions are unique to Chilli Farms and may not align with your personal spice expectations or experiences elsewhere. Additionally, spice tolerance varies for each individual, so we recommend choosing your spice level accordingly.
If you're unsure, we suggest starting at a milder level and adjusting in future orders. Enjoy the heat at your own comfort!

Store as per the product type:
- Ambient (Dry items): Store in a cool, dry place away from direct sunlight.
- Chilled items: Keep refrigerated at or below 4°C.
- Frozen items: Keep frozen at or below −18°C. Do not refreeze once thawed.
Shelf Life: For Click & Collect and Home Delivery orders, all products are supplied with a minimum of 45 days remaining before the best-before or use-by date, unless otherwise stated on the label.
