Butter Curry combines freshly ground in-house spices, thickened cream, and butter, enhanced with coarsely ground cashew nuts for a unique texture, and sweetened with honey for the perfect finish. Crafted with mostly locally-sourced, fresh ingredients, it promises unparalleled quality and a genuine taste experience.

At Chilli Farms, we offer our dishes in five spice levels to cater to different preferences: Mild, Medium, Hot, Extra Hot and Reaper Hot.

Our spice levels are determined using an internal formula based on the amount of chilli powder added per litre. However, other ingredients in our recipes, such as spices, aromatics, and cooking techniques, may influence how you experience the spice.

Please note that our spice level definitions are unique to Chilli Farms and may not align with your personal spice expectations or experiences elsewhere. Additionally, spice tolerance varies for each individual, so we recommend choosing your spice level accordingly.

If you're unsure, we suggest starting at a milder level and adjusting in future orders. Enjoy the heat at your own comfort!

Store spice mixes in a cool, dry place away from direct sunlight, heat, and moisture. Once opened, we recommend using the entire pouch at once to prepare the sauce and freezing any excess sauce for future use.

Shelf Life: For Click & Collect and Home Delivery orders, all products are supplied with a minimum of 45 days remaining before the best before or use-by date.

🍳 Cooking Overview

• This spice mix is used to prepare a butter curry sauce, which can then be cooked into multiple dishes using different proteins or vegetables.

• We recommend preparing the entire sauce batch at once using the full pouch.

• Any excess sauce can be portioned into containers and frozen for future use.

• For a 500 ml container of curry sauce, use approximately 600 g of raw meat or vegetables. Cook the protein or vegetables until done, then simmer in the sauce and serve.

• Please be aware that the Chilli Farms spice mix sachet includes salt.

• The brands used during recipe testing are for reference only. You may use your preferred brands; however, results may vary depending on ingredient choice.

🧄 Ingredients for Butter Curry Sauce

• 150 g unsalted butter

• 200 g onion, peeled and finely diced

• 30 g ginger

• 30 g garlic

• 1 sachet Chilli Farms Butter Curry Spice Mix

• 300 g tomato paste

• 500 g thickened cream

• 250 g raw cashew nuts

• 150 g honey

• 400 ml water *Use less water if you prefer a thicker curry sauce.

👨‍🍳 Cooking Instructions – Prepare the Curry Sauce

  1. Gather ingredients – Assemble all ingredients before starting.
  2. Ginger–garlic paste – Blend equal parts ginger and garlic into a smooth paste. Add a small amount of water if required, using water measured from the recipe.
  3. Prepare cashews – Grind the raw cashew nuts in a food processor or blender to a fine powder. Set aside.
  4. Cook onions – Melt butter in a saucepan over medium heat. Add the diced onions and sauté until light brown. Do not cook on high heat. This step takes about 12–15 minutes and requires patience.
  5. Add ginger–garlic paste – Stir in the paste and cook until the butter begins to separate.
  6. Add spice mix – Lower the heat, add the butter curry spice mix, and cook until the butter separates again.
  7. Cook cream and tomato base – Cook for about 10 minutes, stirring continuously until bubbles begin to rise.
  8. Add water – Add the remaining water and cook until small bubbles start to form.
  9. Add cashew powder – Gradually add the ground cashew powder while whisking continuously to avoid lumps. Cook until rapid bubbles appear.
  10. Finish with honey – Switch off the heat and add honey. Stir well, cover with a lid, and rest for 10 minutes before using.
