At Chilli Farms, we offer our dishes in five spice levels to cater to different preferences: Mild, Medium, Hot, Extra Hot and Reaper Hot.

Our spice levels are determined using an internal formula based on the amount of chilli powder added per litre. However, other ingredients in our recipes, such as spices, aromatics, and cooking techniques, may influence how you experience the spice.

Please note that our spice level definitions are unique to Chilli Farms and may not align with your personal spice expectations or experiences elsewhere. Additionally, spice tolerance varies for each individual, so we recommend choosing your spice level accordingly.

🍳 Cooking Overview

This spice mix is used to prepare Achari curry sauce, which can then be cooked into multiple dishes using different proteins or vegetables.
We recommend preparing the entire sauce batch at once using the full pouch.
Any excess sauce can be portioned into containers and frozen for future use.
For a 500ml container of curry sauce, we recommend using approximately 600g of raw meat or vegetables. Cook until the protein or vegetables are done, then simmer in the sauce and serve.
Please be aware that the Chilli Farms spice mix sachetincludes salt.
The brands used during recipe testing are for reference only. You are welcome to use your preferred brands; however, results may vary depending on ingredient choice.

🧄 Ingredients for Achari Curry Sauce

100 ml sunflower oil
200 g onion, finely diced
50 g ginger–garlic paste
1 sachet Chilli Farms Achari Spice Mix
150 g tomato paste (recommended: Leggo’s)
25 g tamarind paste
25 g lemon juice
500 ml water * Use less water if you prefer a thicker curry sauce.

👨‍🍳 Cooking Instructions - Prepare the Curry Sauce

Gather Ingredients - Assemble all ingredients before starting.
Ginger–Garlic Paste - Blend equal parts ginger and garlic into a smooth paste. Add a small amount of water if required. Use water kept aside from the recipe.
Cook Onions - Heat sunflower oil in a saucepan over medium heat. Add the diced onions and sauté until light brown. Do not cook on high heat. This step takes about 12–15 minutes. Exercise patience.
Add Ginger–Garlic Paste - Stir in the paste and cook until the oil begins to separate.
Add Spice Mix - Lower the heat, add the Achari Spice Mix, and cook until the oil separates again.
Add tomato paste, tamarind paste, and lemon juice. Cook for 5 minutes, stirring continuously until bubbles begin to rise.
Add Water & Simmer - Pour in the water, mix well, and simmer until rapid bubbles form and the sauce thickens slightly.
